ORIENTAL SALAD

It is ready in a maximum of thirty minutes, it can be made with ingredients available to anyone and, depending on the combinations we want, oriental salad can be a very filling option for one of the fasting days of the year.

ingredients:

  • 6 potatoes
  • 1 red onion
  • 10-12 olives
  • 3 sour cucumbers
  • 3-4 tablespoons olive oil
  • salt and vinegar to taste
  • 2 tablespoons mayonnaise (optional)

Wash the potatoes well and boil them with the peel in salted water for 15 minutes.

In the meantime, I almost prepare the other ingredients. Cut the cucumber rounds and then the onion over which sprinkle a pinch of salt.

I make a quick dressing of olive oil, a little salt, a teaspoon of vinegar and a little juice from pickles.

After they have cooled for a few minutes, peel the potatoes, cut them into fairly large cubes and mix them with the olives, onions and sour cucumbers.

Pour over the potatoes and the dressing with olive oil, then combine them lightly with a spatula.

If you want a richer consistency for the salad presented today and do not fast, you can add 2 tablespoons of mayonnaise or fatty yogurt at the end.

I don't know if what I do can be called oriental salad but I went with the idea and I do it like this .. In addition to your recipe I also put 2 teaspoons apple cider vinegar (to marinate onions), juice and pulp !) from about 2 lemons (I really like lemon), olives, parsley (it's good and full of vitamins) and starting today I started to put lettuce and iose MEGAAAAA BUNAAAA. next time I try pickles too

Very tasty salad, it's ok if you have imagination and you can put in it depending on the season about what comes to mind
Advice . when you make the vinaigrette, mix the salt with the pepper in a jar with thread and first the lemon juice or balsamic vinegar depending on what you use and then add the oil and mix again, so you will not be surprised that the salt or pepper does not dissolve.
