If you’re looking for something simple to bake opt for one of our tray bake recipes. Other than the amount of variety you get with a tray bake, the best thing about them is just how easy they are to make. Just pour your chosen mixture into a lined tray and then bake.

Traditionally you cook a tray bake in a square or rectangular tin. The bake can then be easily sliced and divided up once cooled. There’s no need to heavily decorate either like you would a classic cake. Tray bakes look just as impressive served without the icing, topping or decorations.

Tray bakes originate from Northern Ireland. In Northern Ireland, they were not baked like most of the recipes you see here but were commonly a ‘no-bake’ option. They would often resemble a fridge cake or rocky road combining crushed biscuits with condensed milk, dried fruit, chocolate, and even breakfast cereal.


Recipe Summary

  • 1 cup wild rice
  • 3 cups water
  • 1 cup brown rice
  • 2 cups water
  • 2 cups chopped pecans, toasted
  • 2 cups golden raisins
  • 8 green onions, chopped
  • ½ cup chopped fresh mint leaves
  • 3 oranges, zested and juiced
  • ½ cup dry Marsala wine (Optional)
  • ½ cup olive oil
  • salt and freshly ground black pepper to taste

In one saucepan, combine the wild rice and 3 cups of water. Bring to a boil, cover and reduce heat to low. Simmer for 40 to 50 minutes, or until rice is tender and water has been absorbed.

In a separate saucepan, combine the brown rice and 2 cups of water. Bring to a boil, cover and reduce heat to low. Simmer for 45 minutes, or until rice is tender and water has been absorbed.

After both kinds of rice have finished cooking, spread out on baking sheets to cool and dry for about 30 minutes.

In a large bowl, combine the wild rice, brown rice, pecans, raisins, green onions, mint, orange juice and zest. Stir in the wine and olive oil season with salt and pepper. Cover and set aside for 2 hours to blend flavors. Serve at room temperature.

  • White and dark chocolate pieces
  • Caramel sauce or caramel candies
  • Butter mint candies
  • Cookies (such as Oreos, pirouettes or shortbread)
  • Graham crackers

Combine milk, cocoa, syrup, chocolate pieces and vanilla in a 3- to 7-quart slow cooker. Cover and cook on Low until the chocolate is melted, about 2 hours. Stir in liqueur (if using), cream and salt. Keep warm. (Stovetop variation: Whisk milk, cocoa and syrup in a medium saucepan over medium heat. When steaming, whisk in chocolate, 1 piece at a time, until melted, 5 to 8 minutes. Add vanilla. Whisk in liqueur (if using), cream and salt. Keep warm.)

Arrange accompaniments of your choice on a serving board, and serve with the hot chocolate.

How To Make Boozy Caramel French Toast Casserole

Begin with the caramel. In a small saucepan, combine the butter, brown sugar, corn syrup, and one tablespoon of water.

Melt over medium heat, stirring until smooth.

Pour the caramel into a 9 x 13-inch baking dish.

Remove the crust on the brioche and into 1½-in slices. Arrange the bread on top of caramel, making sure entire base is well covered.

In a medium bowl, whisk together eggs, half-and-half, vanilla, Grand Marnier, orange zest and salt until well combined.

Pour evenly over bread. Let sit for at least 15 minutes or cover with plastic wrap and chill in the refrigerator overnight.
